Here
is a healthy breakfast idea, which will become quick when you have some
dough left in the refrigerator. It can make a healthy after-school
snack for kids. Your kids will ask for more and this will become their
favourite snack option. Get the whole recipe.

Servings: makes 4 parathas
Ingredients:
- 1.5 cups wheat flour (for dough)
- 1/2 cup wheat flour (for dusting)
- Water (for kneading)
- 1 tbsp ghee or oil
- 1 tsp salt
- 2 eggs
- 1 onion (finely chopped)
- 2 green chilies (finely chopped)
- 2 tbsp coriander leaves (finely chopped)
- 1/2 inch ginger (finely chopped)
- A pinch of turmeric powder
- Salt (according to taste)
- Oil, butter or ghee (for shallow frying)
Preparation Instructions:
- Mix 1.5 cups wheat flour, 1 tbsp oil and 1 tsp ghee in a bowl. Add water in small quantity to make a soft dough.
- Cover the dough and keep it aside for 10 minutes. Meanwhile prepare the egg mixture.
- Break eggs in a bowl. Add onion, green chillies, coriander leaves, ginger, turmeric powder and salt to the eggs. Mix well.
- Now, divide the dough into 4 equal balls. Take a dough ball, roll it into a small roti, apply oil on the surface, fold it into semi-circle, again apply oil, fold it into triangle.
- Cover the small triangle with dry flour and roll it into a big triangle (from all sides).
- Heat tawa on medium flame and place the paratha over it. When bubbles began to appear, flip the paratha, apply oil and cook for 20 seconds. Flip again, apply oil on other side and cook for 20 seconds.
- When few brown spots appear on both sides, pour 4 tbsp egg mixture on one side of the paratha, spread the mixture with a spoon. Let it cook for few seconds and flip gently.
- Now the egg mixture side is facing the tawa, let it cook on medium flame for 20 seconds. Flip it carefully.
- Check if the egg mixture is cooked. Otherwise flip the paratha again to cook the egg mixture. When the egg mixture will turn into a light brown omelette, the paratha is cooked.
- Serve it as a healthy breakfast with Masala Tea or have it as it is with some tomato ketchup.
Tips:
- Serve the egg parathas when they are hot. Cold parathas will become soggy and not taste good.
