Ingredients:
- 3 medium-sized potatoes (washed, peeled and cut into small pieces)
- 1 big onion (finely chopped)
- 2 big tomatoes (finely chopped)
- 1 tbsp coriander leaves (finely chopped)
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt as per taste
For grinding:
- 3 tbsp grated coconut
- 8 cashew nuts
- Green chillies (according to taste)
- 4 cloves garlic
- 1 tsp fennel seeds (saunf)
- For tempering:
- 1 tbsp cooking oil
- 1 small piece cinnamon (dalchini)
- 2 pieces cloves
- 1 tsp cumin seeds (jeera)
- 4 – 5 fresh curry leaves
Preparation Instructions:
- Grind the items under “for grinding” section together into a smooth paste. You can use little water for grinding. Keep it aside.
- Heat oil in a pressure cooker and temper the ingredients in “for tempering” section. Add chopped onions and fry till they become transparent.
- Add chopped tomatoes and cook till they become soft. Now add chopped coriander, salt, garam masala, turmeric powder and the paste you have prepared in the first step. Cook for 5 minutes on low flame.
- Now, add potato piece and mix well. Add 2 cups water (you may change the quantity of water according to your requirement). Check salt and pressure cook for 2 whistles.
- Garnish with chopped coriander leaves and serve delicious potato korma with puri, paratha, chapati or rice.
