Ingredients:
- 1/4 cup chana dal (split Bengal gram)
- 1/4 cup urad dal (whole black lentils)
- 1/4 cup moong dal (split green gram)
- 1/4 cup arhar dal (split yellow lentil)
- 1/4 cup masoor dal (split red lentil)
- 1/4 tsp turmeric powder
- 2 tsp ghee or oil
- 1/2 tsp cumin (jeera) seeds
- 1/4 tsp mustard seeds (optional)
- 4 to 5 fresh curry leaves
- 1-inch ginger (finely chopped)
- 3 garlic pods (finely chopped)
- 1 large onion (paste)
- 1 large tomato (paste)
- 1 tsp red chilli powder
- Salt to taste
- Chopped coriander leaves
Preparation Instructions:
- Pressure cook the five dals (lentils and grams) with 4 cups water and turmeric powder for 5 whistles.
- Heat oil or ghee in a big wok and add cumin seeds, mustard seeds (optional) and curry leaves to the oil. Let the seeds splutter and turn brown.
- Now, add ginger and garlic. Fry them for a minute.
- Add onion paste and fry it till the colour become golden. Add tomato puree, salt and red chilli powder. Cook for 2 minutes.
- At last, add cooked dal, mix well and cook it for 5 minutes on low flame. Remove it from stove.
- Garnish it with fresh coriander leaves before serving. Enjoy panchratni dal with roti or rice.
