Ingredients:
- 2 eggs (boiled)
- 1 tbsp cooking oil
- 2 tsp ginger garlic paste
- 1 tsp cumin seeds
- 1 onion (finely chopped)
- 2 tomatoes (finely chopped)
- Red chilli powder (according to taste)
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 tsp chicken masala powder (optional)
- Salt to taste
- Coriander leaves
Preparation Instructions:
- Heat cooking oil in a skillet and add cumin seeds in it. Add ginger garlic paste when cumin seeds start changing colour.
- Saute for a minute and add chopped onion. Cook them till they become golden brown.
- In a small bowl, mix coriander powder, red chilli powder and salt. Add a little water and make thick paste.
- Add this paste into the golden brown onion and fry for few minutes till the oil began to separate.
- Add tomatoes and cook them till they become soft. Add a little water and cook the gravy for 2-3 minutes.
- Cut the boiled and unshelled eggs vertically into two pieces. Add them into the gravy.
- Cook eggs and gravy for another 2 minutes till the eggs mix well into gravy. Make sure that the eggs don’t break.
- Turn off the stove. Sprinkle some garam masala and chicken masala. Egg curry is ready. Garnish it with coriander leaves.
- Serve hot and spicy egg curry with rice or chapatis.
Tips:
- You can also use green chillies in place of red chilli powder.
- You can also put full eggs in the gravy instead of cutting them into halves.
